The split-base of smokey Mezcal with Old Tom Gin work well together, complimenting the tart notes in this beautifully balanced sour. The Vida Mezcal used here works particularly well with the honey, while the blackberry brings extra flavour to the party.



30ml - Old Tom Gin

30ml - Vida Mezcal

30ml - Lime Juice

15ml - Blackberry Syrup

15ml - Honey Syrup

Egg White


Add all the ingredients to a tin. Shake with ice, then strain out the ice and shake again to emulsify the egg white. Double strain and garnish with skewered blackberries.
