New and Old World flavours and ingredients are brought together in the PPP to create a cocktail that's rich and warming, while staying pleasantly fresh. The port works beautifully with the char of the pineapple here, providing such deep, toasted notes.
4-6 Chunks - Pineapple. Charred.
50ml - Pisco
15ml - Amaro Montenegro
10ml - Fonseca Tawny Port Reduction
15ml - Lemon Juice
Char the pineapple chunks with a blowtorch (or grill/toast them). Put them in a tin with the lemon juice and Demerara syrup. Lightly muddle, and add the rest of the ingredients. Shake with ice.
Double strain into a chilled double rocks glass.
Garnish with a chunk of pineapple and a lemon wedge.
