Summer kicks off once you have your first Mojito of the season. It's official.

60ml - Rum
30ml - Lime Juice
15ml - Demerara Syrup
6 Mint Leaves
Add all the ingredients into a Collins glass. Add some crushed ice and mix it vigorously with a bar spoon.
Top it up with more crushed (or finely cracked) ice, packing it down tight.
If you like, and there's room in the glass, you can top it with a bit of soda. Mixing in the crushed ice should provide enough dilution that you don't need it thought.
Serve in a Collins glass.
Garnish with a mint sprig.
