Amaro Montenegro is a fantastically diverse liqueur. Herbaceous, delicious and subtly bitter. While the syrup is obviously sweet, using orange juice in this sour helps balance the tartness of the blackberries and the bitterness of the Montenegro. Add an awesomely versatile rum that ties everything together and brings that ABV up, and egg white for a softer mouthfeel, and you've got yourself an incredibly well-rounded drink that shows how easily-adaptable the sour base can be.
30ml - El Dorado 3 Year
30ml - Amaro Montenegro
22.5ml - Orange Juice
22.5ml - Blackberry Syrup
Dry shake all the ingredients in a tin to emulsify the egg white. Add ice and shake again for chilling and dilution.
Garnish with a tidy orange twist on the rim.
