The Clover Club is a century-old cocktail that saw an absolutely huge resurgence thanks to the bar of the same name in Brooklyn, NY. They, along with David Wondrich, found an old, potentially original, recipe that called for the inclusion of Dry Vermouth, and used it as their own. It’s pretty commonly accepted to omit the Dry Vermouth, but to keep things traditional, and elevate that Clover Club to new heights, give this recipe a try.
45ml - London Dry Gin
15ml - Dry Vermouth
20ml - Lemon Juice
20ml - Raspberry Syrup
Serve in a coupe
Garnish with skewered raspberries
To make raspberry syrup, add 2 cups of sugar to one cup of water, bring it to a simmer until all that sugar dissolves. Add in 1 cup of fresh raspberries, remove it from the heat, and let it sit for 15 minutes. Finally, strain those berries out.
